I am always on the lookout for good recipes to feed my big family. There is one soup that they all eat and love. It is my fast heavenly Homemade Minestrone Soup. It is so good and inexpensive to make. I prepare a pot of this soup and serve it with a big green salad and a loaf of French bread. I naturally have to double this recipe to feed my hungry family. I like this recipe because it is quick to prepare and so healthy on those nights when making dinner is a struggle. It is perfect for the soup on a cold night too! So be sure to keep this recipe in mind as winter comes this year.
Heavenly Healthy Minestrone Soup
1 large onion, chopped
4 carrots, diced
4 celery stalks, diced
1/2 cup of small uncooked pasta such as elbow
1 (14.5 oz.) can of diced tomatoes
4 cups of chicken broth
2 cups of water
½ tsp dried oregano
½ tsp black pepper
1 (14.4 oz.) can cut green beans
½ cup of chickpeas, rinsed and drained
1 (15 oz.) can dark kidney beans, rinsed and drained
Combine onions, carrots, celery, dry pasta, tomatoes in juice, chicken broth, water, oregano, black pepper in a large pot over the stove, and bring to a boil. Reduce heat and simmer, covered until carrots are soft and pasta is soft about 15 minutes. Add green beans, chickpeas, and kidney beans and simmer until hot. We garnish our soup with some fresh parmesan cheese and serve! SO DELISH!
*I sometimes add a little more broth to my soup if I feel like some of the liquid cooked off.
