Minestrone Soup Recipe Healthy and Hearty
I am always on the lookout for good recipes to feed my big family. When you are feeding a family of 10 not everyone likes everything you make. There is one soup that they all eat, and love and it is my Minestrone Soup. It is so good and inexpensive to make for the family. I make a pot of this soup and serve it with a big green salad and a loaf of French bread and there are no leftovers. I naturally have to double this recipe to feed my hungry family. What I like about this recipe is it is quick to make and so healthy on those nights when making dinner is a struggle.
1 large onion, chopped
4 carrots, diced
4 celery stalks, diced
1/2 cup of uncooked small pasta such as elbow
1 (14.5 oz.) can of diced tomatoes
4 cups of chicken broth
2 cups water
½ tsp dried oregano
½ tsp black pepper
1 (14.4 oz.) can cut green beans
½ cup of chick peas, rinsed and drained
1 (15 oz.) can dark kidney beans, rinsed and drained
Combine onions, carrots, celery, dry pasta, tomatoes in juice, chicken broth, water, oregano, black pepper in a large pot over stove and bring to a boil. Reduce heat and simmer, cover until carrots are soft and pasta is soft, about 15 minutes. Add green beans, chick peas, and kidney beans and simmer until hot. I sometimes add a little more broth to my soup if I feel like some of the liquid cooked off. Makes 5 servings.
We garnish our soup with some fresh parmesan cheese and serve!
